If you are struggle to cut out sugar in your diet and are desperate for additional sweetness, then drizzle with date syrup, honey or maple syrup. But trust me, it's delicious without!
It's perfect for a light breakfast, snack, or dessert. This blueberry chia pudding parfait is always satisfying. Enjoy layers of creamy yogurt, chia pudding, fresh blueberries, Goji berries and crunchy pistachios (or nuts and seeds of choice) and granola!

Good news – chia pudding is super easy to make!
Make the chia pudding. Add the milk, blueberries and vanilla extract to a blender (such as Nutribullet or Ninja) and blend smooth. Pour into a bowl and stir in chia seeds. Let it rest for 10 minutes and then stir again thoroughly. Cover the bowl and let it gel up in the fridge for at least 2 hours – overnight is best.
To assemble the parfaits: Dollop yogurt in the bottom of a glass or jar. Top that with a few spoonfuls of chia pudding, then a sprinkle of nuts or seeds and Goji berries. Repeat the layer and top off with some granola and fresh blueberries.
Ingredients (2 servings):
For the Chia Pudding
1/2 c frozen or fresh blueberries
1/4 c chia seeds
1 tsp vanilla extract
1 c Coconut milk or milk of choice (I like to coconut as it adds some extra sweetness naturally)
For the Parfaits
1/2 c yoghurt (I used CoCo Coconut Yoghurt)
1/4 c fresh blueberries
1/4 c almonds/nuts/seeds of choice
1/4 c granola
handful of Goji berries
Sprinkle of desiccated coconut
Storage Tips
These chia pudding parfaits are best enjoyed the day of, but you can enjoy them 2 to 3 days later as well. Cover and store them in the fridge immediately after making. Tip - wait until you eat before adding the granola topping as it may get soggy in the refrigerator.
